Hello again! In this weeks food section I have typed up my gluten and lactose free avocado and prawn spaghetti alternative - Avocado and prawn courgetti! It's a really quick and easy meal to make and is super nutritious.

First ingredients...

1 ripe Avocado
1 Pepper
1 Tomato
1 Lemon
1 Onion
1 garlic clove
2 mushrooms
Some frozen prawns
1 Courgette
A teaspoon of coconut oil
A teaspoon of Lactose free cream cheese

The method behind the madness...

First chop up your tomato, avocado and garlic.

These are the ingredients for your sauce. Pop them all in a food processor (I use my smoothie maker) and squeeze in all the juices from the whole of the lemon, blend until a thick paste has formed.

Now onto the main part of the meal. Chop up all of the remaining ingredients and take a teaspoon of the coconut oil and begin to heat it up in the pan (I tend to use a wok sized pan). Once the coconut oil has turned clear add the onion and heat until browning. Then add the prawns to the pan and heat for a further 5 minutes. 

Once the prawns are cooked add the rest of the chopped up ingredients, shortly followed by the sauce you have made. I then like to add a teaspoon of Lactose free cream cheese as it makes the sauce a little richer. This step is up to you however as it tastes great either way. Once you've added all the ingredients to the pan, heat on a simmer for 10 minutes, stirring regularly. 

After 10 minutes just take it off the heat and serve. Easy peasy. A gluten and lactose free healthy meal in only a few steps.
